Preheat oven to 350 degrees and grease cupcake pan.
In a medium bowl whisk flour, oats, salt and baking powder and set aside.
In a mixer blend butter, sugar, soy butter and honey on low speed. Add egg and apples and banana and mix until incorporated. Add milk on low speed, then gradually add flour mixture.
Place into greased cupcake pan and place in oven/ Bake at 350 degrees for about 20-25 minutes. Muffins are done when a toothpick inserted in center comes out clean.
Soy butter is a great alternative to peanut butter for peanut allergies. You can substitute sugar for 1 cup of honey, just wont be as sweet.
