Onion Dip

An onion dip using caramelized onions and shallots with a hint of blue cheese and rosemary.

  • 1 red onion finely diced
  • 3 shallots finely diced
  • 2 tbsp butter
  • 1 tsp salt
  • 1 tbsp rosemary
  • 2 tsp blue cheese crumbles.


  1. In a medium skillet heat 1 tbsp of butter and diced red onion and one diced shallot for about 10-15 minutes on medium heat. Once they are caramelized remove form heat and set aside in a bowl. In same skillet heat the remaining butter and two diced shallots on medium heat for about 10-15 minutes until caramelized and set aside for topping.
  2. In a medium bowl mix cream cheese and sour cream until smooth, add fresh chopped rosemary leaves, salt, Onion mixture and cheese crumbles and mix well. Top with remaining caramelized shallots, cover and refrigerate until serving.

Recipe Notes

Letting the cream cheese sit out for a few minutes to bring to room temperature will help it blend smoother.
