These are mini apple and pumpkin pies, see recipe on pie page for filling, topping and crust.
You will need:
Doubled amount pie crust recipe.
Filling for apple and pumpkin pie
Circular cookie cutter
Tiny leaf shaped cookie cutter
Extra flour for work surface
First you will want to get the cupcake pan ready, spray with non-stick spray and set aside.
Prepare the pie fillings and have ready.
You will be using the pie crust in small sections, get out a little at at time as needed.
TIP: Pie crust is easier to work with when chilled. Keep whatever you are not working with at the time in the refrigerator.
On a floured surface roll out enough dough to cut out a few circles. Using a circular cookie cutter that is about double the diameter of the size of the cupcake, cut out circles and press onto the edges lining the inside of each opening. Allow some extra dough around the outer edges.
For the mini-pumpkin pies, you can then fill the pies with pumpkin pie filling, fill about 3/4 full. Take the edges and form a decorative edge. Cook at 325 degrees for about 15-20 minutes depending on the oven. If the edges appear to be cooking too fast reduce temperature if oven. If temperature is reduced, cooking time will lengthen. Monitor pies closely, when the pie crust is slightly browned and a toothpick inserted in the center comes out clean the pies are done.
Next roll out a large section of pie crust about 1/4 inch thick. Using the leaf cookie cutter, cut out one leaf for each mini-pumpkin pie.(cutting out extra is a good idea incase some overcook) Sprinkle with sugar for extra flavor. Bake in oven at 350 degrees, until golden.
When pumpkin pies are cooked and fully cooled, place whipped topping in decorative icing bag(optional) and squeeze out a small circular amount of topping in center of pie. Top with cooked leaf shaped pie crust garnish. Refrigerate until use.
For the Mini-Apple Pies, begin to prepare the pan the same as the pumpkin by lining the inside with circular pie dough. You will then roll out more dough and cut into thin strips for the lattice top. Fill the inside with the apple filling, then place a few teeny, tiny squares of butter on the the apple pie filling. By overlapping forma lattice shape over the tiny tops of the mini-apple pies. Press the edges to adhere. Cook at 325 degrees for about 20 minutes or until center is bubbly and crust is golden. If you reduce temperature, cook time may increase. These pies are great with added whipped topping.
This is great way to put a fun spin on the usual holiday pie.
