These mini muffins are a delicious way to start off your day. Spiced with cinnamon and topped with a sweet drizzle, these apple cinnamon muffins go perfect with a morning cup of coffee. breakfast, snack or quick treat! Make them regular size or mini making a great snack for a quick treat on the go. I like having these as a after school snack for my kids. The mini size are easier to eat and are less messy while they complete their homework.
Take out unsalted butter and let sit out for about ten minutes to soften. While butter is softening, dice one apple into small pieces. In a medium bowl whisk flour, salt, cinnamon, and baking powder.
Once butter is soft place into a mixer and add the sugars, blend until fluffy. Add eggs, one at a time blending well in-between each addition, then add vanilla and apples. Next, alternate flour (dry) ingredients with wet (milk) ingredients. Start and end with the flour mixture and blend until well incorporated.
Place in cupcake pan lined with cupcake liners until 3/4 full. Bake at 350 degrees for about 18-29 minutes, or until a toothpick inserted in the center comes out clean.
FOR DRIZZLE TOPPING:
In a small bowl, combine 1 cup confectioners sugar and 1 -2 tsp milk and whisk together until it reaches a good consistency that can be poured over the top of the muffins. You may need to add more or less of the confectioner’s sugar.
Once cooled drizzle with topping then sprinkle with cinnamon.
